We’ve been making sausage for a long time with a traditional recipe that has been handed down through the generations. We use forequarter meat from free-range local pigs. This results in a very high meat content sausage (80%) that is full of natural flavor. Watch them as they cook they won’t shrivel or shrink which is a sign that they are not full of water or fat.
